Blackberry Collins
Move over Tom, there’s a new Collins in town! This turns the classic cocktail into something that’s “berry” delicious. Featuring Bluecoat Gin and homemade blackberry simple syrup, the Blackberry Collins is one sensational sip.
Ingredients
- 2 c Bluecoat Gin
- ¾ c fresh lemon juice
- Blackberry simple syrup*
- 2 c club soda
- 8 lemon wheels, for garnish
- 8 mint sprigs, for garnish
*Blackberry simple syrup: Combine 1 ½ cups fresh blackberries, 1 cup sugar and ½ cup water in a medium saucepan and bring to a boil, stirring until sugar is dissolved. Reduce heat and simmer until fruit is very soft, 20-25 minutes, stirring occasionally. Remove from heat, let cool and strain through a fine-mesh sieve into a container, pressing fruit to extract liquid.
Directions
- Combine first three ingredients in a pitcher and fill with ice; stir.
- Add soda and stir gently.
- Serve in Collins glasses.
- Garnish each glass with a lemon wheel and mint sprig.
